Summer Chef’s Selections: Brisket and Bingo at Chevy’s Fresh Mex

My husband and I could eat Mexican food every night! The flavors always satisfy us but when we heard Chevy’s had some new Chef’s Selection menu items with an unexpected ingredient we were intrigued. Our kids – not as adventurous. Not a problem as Chevy’s Fresh Mex also offers a great kids menu, so off we went on a weeknight to treat ourselves to a night off from the kitchen.

Chevy’s Fresh Mex is a fun, full-service restaurant with a vibrant atmosphere resembling a Mexican cantina and an array of made from scratch Mexican dishes, including traditional enchiladas, burritos and tacos, and Fresh Mex favorites like mesquite grilled steak, seafood entrees and a variety of salads and desserts. To complement the menu, Chevys also carries their craft from the kitchen to the cantina with a variety of specialty cocktails.


Our Linden Chevy’s Fresh Mex’s is a community asset, sponsoring charity fundraising nights and giving out ice cream as rewards for reading in the elementary schools. We’re happy to patronize them for all the good they do. Plus, kids eat FREE on Mondays!




What’s on Chevy’s Fresh Mex’s Summer Chef Selections Menu?

Get ready for some brisket! A unique flavor to mix with the fresh Mexican flavors and three ways to try it:


  • Brisket ‘Dillas, Slow-roasted brisket layered with mixed cheese, onions and peppers stuffed in a tortilla.
  • Brisket Enchiladas, Slow-roasted brisket rolled into two corn tortillas topped with ranchero sauce and Jack cheese
  • Brisket Tacos, Two corn tacos stuffed with slow-roasted brisket, homemade slaw, pico de gallo and cotija cheese


Our Chevy’s Fresh Mex Food

I’ve said before that I could eat bucket loads of the Chevy’s salsa and it’s so true. It has a delicious roasted flavor like no other salsa we know. Our server brought us a large cup of it after refilling “a few” times. The chips are warm and salty and crisp … and bottomless!




We ordered the fajita nachos as an appetizer. What a large portion! I had some when I could tear myself away from the salsa, but my husband was a big fan. The nachos topped with refried beans, chicken or steak, and jack or cheddar cheese. Add dollops of pico de gallo, sour cream, and guacamole and it’s a filling and delicious way to start!


Both of our children chose hamburgers (cheeseburgers, without cheese) from the options of quesadilla, corn dogs, mac and cheese or tacos. They were served when our appetizer came which is always a help with hungry kids! It wasn’t much longer before our main entrees were served and it was brisket time! We ordered Brisket ‘Dillas and Brisket Tacos. The brisket was tender and tasty and blended so well with the Mexican flavors. The meals are definitely fresh and filling.

No room for dessert – but we had it anyway!



The kids get ice cream cones included with their meal and I wasn’t about to let them be the only ones to get sweets. The trivia/bingo was about to start so we ordered an Oreo Deep Fried Ice Cream and took our time enjoying it! Sweet, cold and unique – we had to keep the kids from stealing bites.


Our service was great! Our drinks were filled as we needed, our server checked on us, and no one rushed us out! My children can’t resist a bingo game so we stayed another hour to play along. It was really a lot of fun! We will be back on a Thursday for sure.
